I would like to do some communication using the 802.11n Probe request and probe response frames, as these can both hold a large amount of data. Is it possible to read/write these two frames with custom data in WiCED studio on this chip? So far I have not been able to find any information on this.

There is no provision to write custom data in probe request/response. You can consider writing custom data in higher level protocols in transport layer or application layer.
