You want to implement this like a proximity sensor or a normal touch button. Both the kind of application you'll be able to implement with capsense technology. Let me know which kind of application you are interested in, accordingly I'll point you to the application notes.
Actually I want both. In some environments proximity is best (think of hospitals wher surgeons shouldn't touch anything) in some touch is best (kindergarten or normal bathrooms). So application notes to both would be welcome.

Maybe I am a bit impatient, but I would like to continue and my project is "pushing".
I tried to find the application notes Pushek was talking about, but I couldn't.
I also don't know (and cannot make a choice) what technology would do best (CSD or CSA)
and consequently what PSoC is best to be ordered.

The best technology for proximity sensing is CSD. You will get better sensitivity from CSD than CSA. For your application, you can choose a controller from the CY8C21x34 family. The difference between the proximity and touch is only in setting the some parameters of the CSD like resolution and finger threshold.
If you set the resolution of the CSD to 15 or 16 bits, you will get higher sensitivity and hence you can use this as a proximity sensor. Using a resolution of 9 or 10 bits will reduce the resolution and you can use it as touch sensing. I would suggest you to go through the below resources to get a better idea about the technology.
