I was quite sure the Vdd switch select must to be selected with 3.3V in PsOC 3, but now I'm not sure.
The CY8C001-KIT Datasheet states PsOC 1 family must to be at 5V but don't sais notjing specific for PsOC 3.
Apart that I don't know what voltage are supplied the OpAmps, I saw the datasheet but is not much information.
I tried with a follower and I got 3.3V as maximun.
Finally:
How can I have the Vddd=Vdda=5.5V when my supply voltage board is at 3.3V?
Is due to the boost circuit?

The CY8CKIT-001 does have a 3.3V/5.5V Power Source Switch. Check the Quick Start Guide to locate it.
PSoC 3 can be powered in many ways. One important thing to note is that Vdda must be the higest voltage in the system.
Other Vdd's can be equal or less. Vdda can be 1.8V to 5.5V

Yes, Vdda supplies the analog core regulator, which supplies the analog blocks and dedicated analog, like opamps.
