We would like to understand how it is possible to identify a source that woke up our PSOC from sleep.

Based on the wake up ISR routine , you can identify which wake up sources is responsible for waking up the device. Please refer the below application note for possible low power wake up sources (page #3).

Each wake up source generates an interrupt which goes to wake up interrupt controller (WIC) for waking up the device.
