If you have got a kit3210 you just connect the LCD-module to the pins. When you start from scratch I would recommend to have a look into the schematics for the above mentioned kit here http://www.cypress.com/?rID=2541&source=shop and follow the design as close as possible.
You will need 7 bits of an io-port, preferrably P1 or P2 to connect an LCD.

The LCD has to have an LCD controller on it, and be Hitachi/Renesas 44780
controller compatible.
For contrast adjustment you can use a simple pot or PSOC DAC to handle that.
"Normal" contrast voltage is ~ .5 to 1 V referenced to ground.
If you are shopping around for a display get the blue mode, white characters on a blue
background, LED backlight (if you can afford the B/L power consumption), these displays
look great compared to puke green displays we have been using since the disappearance
of dinosaurs).

PSOC can do a multiplexed LCD drive, eg. PSOC becomes the controller,
