How would you go about expanding the number of capsense pins on the Ez Ble module. Is a solution to communicate with a capsense IC from the CY8C20XX6A family using I2C?

CYBLE-022001-00 supports upto 16 GPIOs. How many sensors would you require?CY8C20XX6A can communicate to the BLE device over I2C. What data would you like to communicate between the two devices?

Another choice is to use a PSoC4 CY8C4245 to communicate with the module via I2C. Same family, slightly different architecture and pricing is comparably low.

If you want even lower costs consider a PSOC 4000 familiy part.
