I have been using PSoC1 in the past but I see that now it is just about unsupported. I would like a solution , and an associated kit, to allow the development of a precision , down to the microvolt range, input as well as display the result. Trying to develop a precision force sensor , display and datalogger, operated on 9Vdc

I would recommend CY8CKIT-059 PSoC5LP Prototyping Board
It has 20-bit DelSig-ADC, which can go down to ~100nV. PSoC5 is also the only uC equipped with DelSig-ADC, so the choice is rather limited.

As an alternative you can try inexpensive 24-bit DelSig-ADC HX711, which can be interfaced to any PSoC4 or PSoC5 using custom component
