The SoM we're looking at contains n Sterling-LWB5 with CYW43353 for WiFi. It supports 802.11ac, but my question is if it supports CCMP-256 or GCMP-256 in 802.11ac mode for 256bit AES keys?

No. Support only for AES 128.

for the device to show Supported Ciphers

The above chip supports AES 128 with CCMP.
