Hello! Could I connect an EXPOSED HEAT SINK of S25FL256SAGNFV00 in WSON package to the VSS (pin # 4) (GROUND)?

Yes it can be connected to ground. It can also be left unconnected. Please refer the KB article from the link given below for more details..
